There is no PIP on any of the the Audio Injector interfaces.
In addition to this, the signal level must be at line level, i.e., coming from a mixer output.
In general, most sound interfaces do NOT support mic-level signals or PIP.

I have an old Pi running with a Wolfson card for my Locusonus streaming setup.
I have two Shure omni boundary mics connected to the matching preamps (mini 4 pin to XLR), running into an M-Audio Audio Buddy that supplies the phantom power for the mics and brings it up to line level.
Then that signal is EQ'd by an old Realistic stereo semi-parametric EQ before going into the Wolfson card.

I have used an inexpensive (<$USD 30.00) USB sound interface, the Vantec NBA-200U USB External 7.1 Channel Audio Adapter, for running multi-channel sound out from a Pi for a gallery installation and it worked quite well. The drivers are built into the standard Pi Debian load, so no fussing around. It does have two mic inputs and I believe that they are PIP as well, but note that these are two mono inputs, so you may need to make a simple adapter cable to use this interface. But understand that I have not personally tried it, so I make no guarantees as to the PIP or the ease of select the two mic inputs from Debian. For the price, it's worth the effort to find out.

PIP mics are designed to be used with stereo portable memory recorders, so you are going to have a tough time finding any computer sound interface that provides PIP facilities. One way to solve the streaming conundrum is to employ an inexpensive stereo USB interface that can accept a pair of regular (not PIP) mics and work with the Pi. This solves the preamp issue and most of these interfaces also supply phantom power if you need it.

I believe that Behringer and a number of other well known manufacturers make such interfaces that work out of the box with the Pi without any further need for special drivers. The cost is ~ $USD 100.00. Check out some of the Locusonus site descriptions here in the USA on the soundmap and you will find at least one that uses exactly this configuration.

I haven't been following this thread until now, but I would think that the folks making up Pi loads for streaming would have an image that is configurable to use a stereo USB sound interface. If not, then you have to lobby for it or contact the fellow(s) I just mentioned from the soundmap and find out what they use.

BTW, if you just need to do streaming for a short time, take one of your memory recorders, put in into record-pause mode and then take the line out (or headphone out) into your Audio Injector (or other Pi shield) and you're golden. The memory recorder takes care of the PIP & preamp needs for you. Be sure to power the recorder from an AC supply so you don't need to worry about the batteries.

I only see RCA connectors, so I'd assume line-in/out.
