I have been pretty lucky with USB Audio: I've been running a stream 24/7 since 2015 with the Locus Sonus streambox image and a Behringer UCA202 (USB with RCA line in/out, no mic preamps) with no stability problems. No config reqiuired.
The IQuadio boards have a preamp with bias for electrets, but it looks like they're mono. (The preamp seems to be built-in to the CODEC chip they're using. Those are usually quite noisy.)
If folks want high quality stereo preamps for 3.5mm "plug-in power" mics, with no external power supply required, the already-mentioned PiSound looks like a promising option (I haven't used one.): https://blokas.io/pisound It's expensive, though. If you have XLR mics, a "professional" USB interface like the Behringer UMC202HD is a little more money but it should work fine and you can use it for other computers too (no drivers required). 2 low-noise XLR preamps with phantom power, powered by the USB port. Grant uses the Focusrite Scarlett 2i2, which is similar and a bit more money.

there was the wolfson / cirrus logic board with stereo line in and
plugin, worked good with eg. primo capsules, or any other PIP / electret
condenser mic. discontinued, not available any more.
there is the IQ Audio http://iqaudio.co.uk/hats/100-pi-codec.html
where Grant, Gregoire, I and others have been sort of involved, at
least we've been providing ideas to IQAudio.
this board sounds good and works with the mentioned mics. but it's sort
of ... unbalanced ... and not intuitive to configure, though not
complicated. at the moment I'd say it's the best available.
then there is usb audio, means you can connect a usb mic, or recorder, or
soundcard, works most of the times, but is not stable (my experience)
for days or longer.
let me know if you need more info or help.
all above is valid for raspberry pi. there's also the option to use a
phone with USB device, host cable / adapter required.

I’ve been thinking of setting up Raspberry pi streaming for a while and with time on my hands
this seems a good moment.
Which of the R.pi versions available do you recommend? I probably wouldn't use it for anything but the streaming.
