I'm using a setup that I think sounds pretty good, and has withstood almost direct exposure to the elements for just over three years. It is, however, not terribly compact. My system currently consists of the following: A Behringer UCA-202 USB audio device, line-in only, A Yamaha MG-102C small format mixer, 2x Behringer XM8500 dynamic microphones in an ORTF stereo bar on a mic stand on the ground, an old Phonic PCL3200 stereo compressor on the two mic channel inserts. This is also being processed a little, very discretely, by a couple of multi-band software compressors in Reaper, all running on an old Pentium III 933 mhz machine running Windows XP. I've also turned the highpass on the two channel strips on, so that a gust of wind doesn't throw the compressors into a fit. It's currently streaming on my own server at http://borris.me/ outside.m3u if you'd like to see how this setup sounds. Note that this stream is 128k AACPlus V2.
I'd like to see something that sounds nice, with decent headroom and SNR, but a bit easier to manage than this, while keeping a good stereo image. I've thought of trying one of the Andria Electronics stereo USB dongles and a tiny set of electret condensers, but with that, you have problems with earth ground, or lack thereof, and 50/60 hz hum being introduced to the system pretty easily. I have also tried the Griffin iMic, which has a stereo mic/line input, but I tfound it to be way too noisy.

One disapointement with the PI was the impossibility to use both input and output at the same time with PD and alsa. This issue will certainly be fixed soon (I'v seen a effect box buitl around the RPI floating around).
The native sound output is dirty, way too dirty.
I use a usb sound card, and all the one i'v tried work fine, for both input and output. For just one usb soundcard power is not an issue since the model B rev 2 (this version of hardaware get rid of the 200ma polyfuse on USB power line). Actually the all RPi is limited to 0.7A total.
Using a BlueMicrophone icile usb soundcard (providing +48v) with a thonman T-bone monitoring microphone, the quality of the stream, even in 3G, is pretty much very decent.
Just to mention, the last vesion of wheezy debian include a wifi config script. That's promissing but I failed to obtain a stable wifi connection with the dongle laying around.
My porject including 3G, I use a powered usb hub to power the RPI, and plug all the usb devices I need (usb sound card, 3G modem, the Pi itself but just for power, mouse and keyboard).
My opinion on the Raspberry Pi is that for the price it does the job well. I was able to stream audio with PD-extended and an usb soundcard relatively easily.
But as Alejo mentioned, you always need one more cable with, and the squid like mess ensue…

eii udo, it has USB so you need a USB hub to power such things appropiately.. you end up with many cables, not that im a wireless person, but the small form factor of the RPi get quicky inmersed

maybe we
could share this work for locus sonus project. For the Apo33 bot project we will had effects, sensors and automation in between
but
the 1st principle is a mic + rasp + ices + icecast
We are working on a tutorial, soon available, I'll keep you
update
but if you are interested we could already exchange on this.
