I wish this had a one-line answer!

If your microphones take 48V Phantom power, then you can use a range of USB soundcards with the Pi. At SC we use a lot the Focurite 2i2 2nd Gen, which is discontinued, available quite cheaply, and has great preamps. 

(Note that the newer 2i2 3rd Generation, which a really nice little preamp imo, requires a manual button press to activate Phantom power on boot, which makes it effectively useless for remote streaming applications.)

Locus Sonus favor a similar soundcard. You can find many details on Grégoire Lauvin's streambox design eg here:

You can modify a pair of Primo EM-172 or EM-272 electret capsules to work with 48V Phantom power by following the build notes here:

This approach is the simplest mod possible and gives us very good results.
Eg you can hear it in the south-walney stream, which has just returned to the map..

Grégoire has a more refined, and more complicated circuit, as described above.

You can also buy microphones based on the Primo and modified for 48V bias voltage from micboosters:

They are good but quite expensive.

We are still looking for a really good and affordable interface between the Pi and the microphones.. we'd better make one..

Greetings from blue and sunny Berlin. I hope all is very well.

The workshop is a great idea. I’d certainly like to join in.

I’ve been thinking of setting up Raspberry pi streaming for a while and with time on my hands 
this seems a good moment.

Which of the R.pi versions available do you recommend? I probably wouldn't use it for anything but the streaming.
